If you don't want to use alcohol, try soy milk (or pear juice) + 1 grated tonka feva (or almond extract) + 1 tbsp cane sugar (if using soy milk). If you want to use another alcohol, try another cooked wine, like a sweet sherry + 1 grated tonka feva (or almond extract). I can't assure it will taste good, as I haven't tested it, but this is what I would try. However, you can find Echinacea, but mostly in what we call "teinture mère", an homeopathic medecine with an alcohol basic (used to improve immunitary system). You can find it in most chemist's.
